METHOD Take shallots in a blender. Add garlic, coconut, fish, salt, white pepper powder, lemon juice, eggs and thick coconut milk and blend to a smooth paste.Wash the banana leaves with boiling water to make it soft and flexible. In the middle of each banana leaf place two to three tablespoons of the paste and wrap it up by rolling the leaf. Seal the top and bottom ends with a help of toothpicks. Grill each packet directly over hot charcoal or under preheated broiler for ten to fifteen minutes, turning it from time to time until the banana leaves are charred. Serve hot. Note: You can prepare smaller servings too. You can also use aluminium foil in place of banana leaves. |
