Pumpkin Pancakes

Ingredients:
• 1 Cup pumpkin puree • 2 Cups flour • 4 Eggs, separated • 2 tbsp Granulated sugar • 1/4 Cup melted butter • 1-1/2 Cups milk • 1 tsp Cinnamon • 4 tsp Baking powder • 1 tsp Salt

How to make Pumpkin Pancakes:
Sift together flour, cinnamon, baking powder and sugar.
Mix egg yolks, butter, milk and pumpkin puree and stir into the flour mixture until blended.
Beat egg whites until it solidifies and fold it into batter.
Pour about 1/4 cup batter onto hot and greased griddle; cook until the top starts bubbling turn and cook the other side in the same manner.
